Chicken Meatball Sheet Pan Recipe with Romesco

Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 red bell pepper, roasted and chopped
  • 1/4 cup almonds, toasted
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, paprika, salt, and pepper. Mix until well combined.
  3. Form mixture into meatballs and place on the prepared baking sheet.
  4. Bake for 15-20 minutes until meatballs are cooked through and golden.
  5. Meanwhile, prepare the Romesco sauce by blending roasted red pepper, toasted almonds, olive oil, red wine vinegar, smoked paprika, and lemon juice until smooth.
  6. Serve meatballs warm with Romesco sauce drizzled on top and garnish with fresh parsley.

Notes

Roast extra red peppers for more sauce. Can be served with rice or crusty bread for a complete meal.
