These chicken fajita quesadillas are cheesy, flavorful, and easy to make, served with fresh homemade guacamole for a satisfying and crowd-pleasing meal.

- 2 boneless, skinless chicken breasts, sliced
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 1 tablespoon fajita seasoning
- 2 cups shredded Mexican blend cheese
- 4 large flour tortillas
- 2 ripe avocados
- 1 tablespoon lime juice
- 1 small tomato, diced
- 2 tablespoons fresh cilantro, chopped
- Salt to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chicken and cook until no longer pink.
- Add bell peppers, onion, and fajita seasoning.
- Cook until vegetables are tender.
- Remove mixture from the skillet.
- Place a tortilla in the skillet and sprinkle cheese on one half.
- Add chicken fajita mixture on top of the cheese.
- Sprinkle with more cheese and fold tortilla.
- Cook until golden on both sides and cheese is melted.
- Repeat with remaining tortillas.
- In a bowl, mash avocados with lime juice and salt.
- Stir in diced tomato and cilantro.
- Serve quesadillas hot with fresh guacamole.
Notes
For extra flavor, serve with sour cream or salsa. Adjust fajita seasoning to your preferred spice level.
