Chicken Fajita Quesadillas Recipe with Fresh Guacamole

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 tablespoon fajita seasoning
  • 2 cups shredded Mexican blend cheese
  • 4 large flour tortillas
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1 small tomato, diced
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken and cook until no longer pink.
  3. Add bell peppers, onion, and fajita seasoning.
  4. Cook until vegetables are tender.
  5. Remove mixture from the skillet.
  6. Place a tortilla in the skillet and sprinkle cheese on one half.
  7. Add chicken fajita mixture on top of the cheese.
  8. Sprinkle with more cheese and fold tortilla.
  9. Cook until golden on both sides and cheese is melted.
  10. Repeat with remaining tortillas.
  11. In a bowl, mash avocados with lime juice and salt.
  12. Stir in diced tomato and cilantro.
  13. Serve quesadillas hot with fresh guacamole.

Notes

For extra flavor, serve with sour cream or salsa. Adjust fajita seasoning to your preferred spice level.
