- 500g chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can white beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until lightly browned.
- Add chopped onion and cook until softened.
- Stir in garlic and cook for 30 seconds.
- Add white beans, diced tomatoes, and chicken broth.
- Season with chili powder, cumin, paprika, salt, and black pepper.
- Bring to a simmer and cook for 25 minutes.
- Stir occasionally until chili thickens.
- Remove from heat and garnish with fresh cilantro.
- Serve hot.
Notes
Adjust the spice level by adding more chili powder or a pinch of cayenne. Serve with sour cream or shredded cheese if desired.
