- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 400g canned diced tomatoes
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken thighs with salt and pepper, then brown on both sides, about 5 minutes per side.
- Remove chicken and set aside.
- Add onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
- Add garlic and cook 1 minute until fragrant.
- Stir in diced tomatoes, chicken broth, oregano, basil, and red pepper flakes.
- Return chicken to the skillet, reduce heat to low, cover, and simmer for 30-35 minutes until chicken is cooked through.
- Adjust seasoning with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, marinate chicken in olive oil, garlic, and herbs for a few hours before cooking.
