- 4 boneless, skinless chicken breasts
- 8 oz sausage, removed from casing
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- Kitchen twine for tying
Instructions
- Preheat oven to 180°C.
- Flatten chicken breasts using a meat mallet to an even thickness.
- In a bowl, mix sausage, breadcrumbs, Parmesan, garlic, parsley, salt, and pepper.
- Place a portion of sausage mixture onto each chicken breast and roll tightly.
- Secure each roll with kitchen twine.
- Heat olive oil in a skillet over medium-high heat and brown the chicken rolls on all sides.
- Transfer to a baking dish and bake for 20–25 minutes until fully cooked.
- Remove twine before serving and slice as desired.
Notes
Serve with roasted vegetables or a light salad. Make ahead by preparing the roulades and refrigerating until ready to bake.
