Chicken Ballotine with Sausage

Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz sausage, removed from casing
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Kitchen twine for tying

Instructions

  1. Preheat oven to 180°C.
  2. Flatten chicken breasts using a meat mallet to an even thickness.
  3. In a bowl, mix sausage, breadcrumbs, Parmesan, garlic, parsley, salt, and pepper.
  4. Place a portion of sausage mixture onto each chicken breast and roll tightly.
  5. Secure each roll with kitchen twine.
  6. Heat olive oil in a skillet over medium-high heat and brown the chicken rolls on all sides.
  7. Transfer to a baking dish and bake for 20–25 minutes until fully cooked.
  8. Remove twine before serving and slice as desired.

Notes

Serve with roasted vegetables or a light salad. Make ahead by preparing the roulades and refrigerating until ready to bake.
