Cheesy Ground Beef & Cauliflower Casserole

Ingredients

  • 1 lb ground beef
  • 1 medium head cauliflower, cut into florets
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Steam cauliflower florets until tender, about 5-7 minutes.
  3. In a skillet, heat olive oil over medium heat and sautΓ© onion and garlic until softened.
  4. Add ground beef and cook until browned, draining excess fat.
  5. Stir in sour cream, milk, and half of the shredded cheese. Mix until well combined.
  6. Add steamed cauliflower to the beef mixture and stir gently.
  7. Transfer mixture to a baking dish and top with remaining cheese.
  8. Bake for 20 minutes until cheese is melted and bubbly.
  9. Serve hot.

Notes

You can add spices like paprika or thyme for extra flavor. This casserole reheats well for leftovers.
