- 1 lb ground beef
- 1 medium head cauliflower, cut into florets
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375Β°F (190Β°C).
- Steam cauliflower florets until tender, about 5-7 minutes.
- In a skillet, heat olive oil over medium heat and sautΓ© onion and garlic until softened.
- Add ground beef and cook until browned, draining excess fat.
- Stir in sour cream, milk, and half of the shredded cheese. Mix until well combined.
- Add steamed cauliflower to the beef mixture and stir gently.
- Transfer mixture to a baking dish and top with remaining cheese.
- Bake for 20 minutes until cheese is melted and bubbly.
- Serve hot.
Notes
You can add spices like paprika or thyme for extra flavor. This casserole reheats well for leftovers.
