  • 2 cups cooked chicken, shredded
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup chicken broth
  • 1/4 cup chopped parsley
  • 1/4 cup chopped almonds
  • 4 sheets phyllo dough
  • 2 tablespoons melted butter

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened.
  3. Add garlic, cinnamon, ginger, paprika, salt, and black pepper.
  4. Stir until fragrant.
  5. Add shredded chicken and chicken broth.
  6. Cook until heated through and slightly reduced.
  7. Stir in parsley and chopped almonds.
  8. Reduce heat to low.
  9. Brush phyllo sheets with melted butter.
  10. Layer phyllo over the skillet, tucking edges slightly inside.
  11. Cook covered for 5–7 minutes until phyllo is crisp.
  12. Serve warm.

Notes

For extra flavor, dust lightly with powdered sugar and cinnamon before serving, just like traditional pastilla.
