Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Place chicken breasts and vegetables on a large baking sheet.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, garlic, Italian seasoning, salt, and pepper.
  4. Pour the balsamic mixture evenly over the chicken and vegetables.
  5. Toss vegetables gently to coat.
  6. Bake for 25-30 minutes, flipping chicken halfway through, until chicken is cooked through.
  7. Remove from oven and let rest for a few minutes.
  8. Divide evenly into meal prep containers.
