Chicken Fajitas Mexican Style


Description

Authentic Mexican-style chicken fajitas with tender marinated chicken, colorful peppers and onions, and bold spices for a quick and flavorful meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Flour or corn tortillas for serving
  • Optional toppings: salsa, sour cream, shredded cheese, cilantro

Instructions

  1. In a bowl, combine chicken with chili powder, cumin, paprika, garlic powder, salt, pepper, and lime juice. Let marinate for at least 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken slices and cook until browned and cooked through, about 5-6 minutes.
  4. Add sliced bell peppers and onion to the skillet and sauté for 4-5 minutes until tender-crisp.
  5. Warm tortillas in a separate pan or microwave.
  6. Serve chicken and vegetables on tortillas and top with optional toppings as desired.

Notes

For extra flavor, marinate chicken for 30 minutes. Serve with lime wedges for added zest.
