- 1 lb boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Juice of 1 lime
- Flour or corn tortillas for serving
- Optional toppings: salsa, sour cream, shredded cheese, cilantro
Instructions
- In a bowl, combine chicken with chili powder, cumin, paprika, garlic powder, salt, pepper, and lime juice. Let marinate for at least 10 minutes.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken slices and cook until browned and cooked through, about 5-6 minutes.
- Add sliced bell peppers and onion to the skillet and sauté for 4-5 minutes until tender-crisp.
- Warm tortillas in a separate pan or microwave.
- Serve chicken and vegetables on tortillas and top with optional toppings as desired.
Notes
For extra flavor, marinate chicken for 30 minutes. Serve with lime wedges for added zest.
