Easy Sausage Breakfast Muffins


Description

Simple, protein-packed sausage breakfast muffins made with eggs, cheese, and savory sausage. Perfect for meal prep and busy mornings.


Ingredients

  • 1 lb breakfast sausage
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook sausage in a skillet until browned, then drain excess grease.
  3. In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
  4. Spray a muffin tin with nonstick spray.
  5. Divide cooked sausage evenly into each muffin cup.
  6. Pour egg mixture over sausage.
  7. Top each muffin with cheddar cheese.
  8. Bake for 18–20 minutes or until set.
  9. Cool slightly before removing and serve warm.

Notes

Store leftovers in the fridge for up to 4 days or freeze for easy grab-and-go breakfasts. Reheat in the microwave for 30–45 seconds.
