These super easy breakfast quesadillas are loaded with melted cheese, fluffy eggs, and your choice of breakfast favorites—quick, delicious, and perfect for busy mornings.


Ingredients

  • 4 large flour tortillas
  • 4 eggs
  • 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
  • 1/2 cup cooked bacon or sausage
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tbsp butter or oil
  • Salt and pepper to taste
  • Optional: salsa, sour cream, avocado

Instructions

  1. Scramble eggs in a skillet with butter until cooked; season with salt and pepper.
  2. Lay tortillas flat and sprinkle cheese on half of each tortilla.
  3. Add scrambled eggs, bacon or sausage, peppers, and onions.
  4. Fold tortillas in half to form quesadillas.
  5. Cook each quesadilla in a skillet over medium heat until golden and cheese is melted.
  6. Slice and serve with salsa, avocado, or sour cream.

Notes

For a lighter option, swap meat for spinach or mushrooms. Great for freezing and reheating for quick breakfasts.
