- 4 large flour tortillas
- 4 eggs
- 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
- 1/2 cup cooked bacon or sausage
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp butter or oil
- Salt and pepper to taste
- Optional: salsa, sour cream, avocado
Instructions
- Scramble eggs in a skillet with butter until cooked; season with salt and pepper.
- Lay tortillas flat and sprinkle cheese on half of each tortilla.
- Add scrambled eggs, bacon or sausage, peppers, and onions.
- Fold tortillas in half to form quesadillas.
- Cook each quesadilla in a skillet over medium heat until golden and cheese is melted.
- Slice and serve with salsa, avocado, or sour cream.
Notes
