- 1 lb ground beef
- 1 large head cauliflower, cut into florets
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup sour cream
- 1/4 cup cream cheese
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Steam cauliflower florets until just tender, then drain well.
- Heat olive oil in a skillet and sauté onions until soft.
- Add garlic and cook for 1 minute.
- Add ground beef, breaking it apart, and cook until browned.
- Season with salt, pepper, and paprika.
- Stir in sour cream and cream cheese until melted and creamy.
- Combine beef mixture with cauliflower and transfer to a casserole dish.
- Top with cheddar and mozzarella cheese.
- Bake for 20–25 minutes until bubbly and golden.
- Let cool slightly before serving.
Notes
For extra flavor, add chopped green onions or red pepper flakes on top before serving.
