Cheesy Ground Beef and Cauliflower Casserole


Description

A hearty, cheesy, low-carb casserole loaded with seasoned ground beef, tender cauliflower, and melty cheese. Perfect for an easy weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 large head cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/4 cup cream cheese
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam cauliflower florets until just tender, then drain well.
  3. Heat olive oil in a skillet and sauté onions until soft.
  4. Add garlic and cook for 1 minute.
  5. Add ground beef, breaking it apart, and cook until browned.
  6. Season with salt, pepper, and paprika.
  7. Stir in sour cream and cream cheese until melted and creamy.
  8. Combine beef mixture with cauliflower and transfer to a casserole dish.
  9. Top with cheddar and mozzarella cheese.
  10. Bake for 20–25 minutes until bubbly and golden.
  11. Let cool slightly before serving.

Notes

For extra flavor, add chopped green onions or red pepper flakes on top before serving.
