- 4 English muffins, split
- 4 eggs
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup cooked bacon or sausage
- 1/2 cup pizza sauce or marinara
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat oven to 400°F (200°C).
- Place English muffin halves on a baking sheet and lightly spray with olive oil.
- Spread pizza sauce over each muffin.
- Add cheese, cooked bacon or sausage, peppers, and onions.
- Crack a small egg on top, or scramble eggs separately and add.
- Season with salt and pepper.
- Bake for 10–12 minutes or until cheese is melted and eggs are cooked.
- Serve warm and enjoy.
