Classic Chicken Vegetable Soup Recipe

Ingredients

  • 1 lb boneless chicken breast or thighs
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 potato, diced
  • 1 cup green beans, chopped
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 cup corn (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic and sautΓ© until softened.
  3. Add carrots, celery, potatoes, and green beans and cook for 5 minutes.
  4. Add chicken broth, thyme, parsley, salt, and pepper.
  5. Place chicken into the pot and bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Remove chicken, shred it, and return it to the pot.
  8. Add corn if using and simmer for an additional 5 minutes.
  9. Adjust seasoning and serve warm.

Notes

For richer flavor, use bone-in chicken and remove bones before serving. Soup stores well and tastes even better the next day.
