Ingredients

- 1 lb boneless chicken breast or thighs
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 potato, diced
- 1 cup green beans, chopped
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 cup corn (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic and sautΓ© until softened.
- Add carrots, celery, potatoes, and green beans and cook for 5 minutes.
- Add chicken broth, thyme, parsley, salt, and pepper.
- Place chicken into the pot and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Add corn if using and simmer for an additional 5 minutes.
- Adjust seasoning and serve warm.
Notes
For richer flavor, use bone-in chicken and remove bones before serving. Soup stores well and tastes even better the next day.
