- 1 1/2 lbs chicken breast, diced
- 1 tablespoon olive oil
- 1 cup raw cashews
- 1 red bell pepper, diced
- 1 cup broccoli florets
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken, season with salt and pepper, and cook until browned.
- Stir in garlic and ginger; cook for 1 minute.
- Add bell pepper and broccoli; cook until tender-crisp.
- In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and honey.
- Pour sauce into the skillet and stir to combine.
- Add cornstarch slurry to thicken the sauce.
- Stir in cashews and cook for 2β3 more minutes.
- Top with green onions.
- Serve warm over rice.
Notes
For extra crunch, toast the cashews beforehand. Add chili flakes or sriracha for heat!
