  • 1 cup broccoli florets
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced chicken, season with salt and pepper, and cook until browned.
  3. Stir in garlic and ginger; cook for 1 minute.
  4. Add bell pepper and broccoli; cook until tender-crisp.
  5. In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and honey.
  6. Pour sauce into the skillet and stir to combine.
  7. Add cornstarch slurry to thicken the sauce.
  8. Stir in cashews and cook for 2–3 more minutes.
  9. Top with green onions.
  10. Serve warm over rice.

Notes
