This easy breakfast tortilla pizza is quick, customizable, and the perfect morning meal—crispy, cheesy, and ready in minutes.


Ingredients

  • 4 large flour tortillas
  • 4 eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or blend)
  • 1/2 cup cooked bacon or sausage
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: spinach, tomatoes, jalapeños, hot sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush tortillas lightly with olive oil and place on a baking sheet.
  3. Add cheese, bacon or sausage, peppers, and onions.
  4. Crack one egg onto the center of each tortilla.
  5. Season with salt and pepper.
  6. Bake for 8–12 minutes or until edges are crispy and eggs are cooked to your liking.
  7. Top with optional ingredients and serve warm.

Notes

Swap the egg for scrambled eggs if preferred. Great for meal prep or customizable family breakfasts.
