- 4 large flour tortillas
- 4 eggs
- 1 cup shredded cheese (cheddar, mozzarella, or blend)
- 1/2 cup cooked bacon or sausage
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional toppings: spinach, tomatoes, jalapeños, hot sauce
Instructions
- Preheat oven to 400°F (200°C).
- Brush tortillas lightly with olive oil and place on a baking sheet.
- Add cheese, bacon or sausage, peppers, and onions.
- Crack one egg onto the center of each tortilla.
- Season with salt and pepper.
- Bake for 8–12 minutes or until edges are crispy and eggs are cooked to your liking.
- Top with optional ingredients and serve warm.
Notes
