Easy Breakfast Casserole


Description

A warm, hearty, and cheesy breakfast casserole loaded with eggs, sausage, potatoes, and veggies—perfect for weekends, holidays, or meal prep.


Ingredients

  • 8 large eggs
  • 1 lb breakfast sausage
  • 2 cups frozen diced hash browns
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. Cook sausage in a skillet until browned; drain excess grease.
  3. Add onions and bell peppers to the skillet and sauté until softened.
  4. Spread hash browns evenly in the baking dish.
  5. Layer cooked sausage and sautéed vegetables over the potatoes.
  6. In a bowl, whisk eggs, milk, garlic powder, paprika, salt, and pepper.
  7. Pour egg mixture over the casserole ingredients.
  8. Top with cheddar and Monterey Jack cheese.
  9. Bake for 40–45 minutes, until eggs are set and cheese is melted.
  10. Let cool slightly before slicing and serving.

Notes

Add spinach, bacon, or mushrooms for extra flavor. This casserole reheats wonderfully—ideal for make-ahead breakfasts!
