Ground Beef and Broccoli Casserole


Description

A creamy, cheesy, and satisfying ground beef and broccoli casserole that’s easy to make and perfect for a cozy weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 3 cups broccoli florets
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Steam or blanch broccoli until tender-crisp and set aside.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook diced onion and garlic until softened.
  5. Add ground beef and cook until browned; drain excess grease.
  6. Season with paprika, garlic powder, salt, and pepper.
  7. Stir in cream of mushroom soup, sour cream, and cooked rice.
  8. Fold in broccoli and half of the cheddar cheese.
  9. Transfer mixture to a baking dish.
  10. Top with remaining cheese.
  11. Bake for 20–25 minutes until hot and bubbly.
  12. Serve warm.

Notes

Add crushed Ritz crackers on top for a crunchy finish. You can also swap rice for quinoa or pasta!
