A creamy, cheesy, and satisfying ground beef and broccoli casserole that’s easy to make and perfect for a cozy weeknight dinner.

- 1 lb ground beef
- 3 cups broccoli florets
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C).
- Steam or blanch broccoli until tender-crisp and set aside.
- Heat olive oil in a skillet over medium heat.
- Cook diced onion and garlic until softened.
- Add ground beef and cook until browned; drain excess grease.
- Season with paprika, garlic powder, salt, and pepper.
- Stir in cream of mushroom soup, sour cream, and cooked rice.
- Fold in broccoli and half of the cheddar cheese.
- Transfer mixture to a baking dish.
- Top with remaining cheese.
- Bake for 20–25 minutes until hot and bubbly.
- Serve warm.
Notes
Add crushed Ritz crackers on top for a crunchy finish. You can also swap rice for quinoa or pasta!
