  • 6 large eggs
  • 1 cup milk
  • 3 cups frozen shredded hashbrowns
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with cooking spray.
  2. Cook sausage in a skillet until browned; drain excess grease.
  3. Add diced onions and bell peppers; cook until softened.
  4. Spread hashbrowns evenly in the baking dish.
  5. Layer cooked sausage and sautéed vegetables over the hashbrowns.
  6. In a bowl, whisk together eggs, milk, garlic powder, paprika, salt, and pepper.
  7. Pour egg mixture over the casserole ingredients.
  8. Top with shredded cheddar cheese.
  9. Bake for 40–45 minutes, or until eggs are fully set.
