This one-pot Chicken Marengo is a hearty, rustic dish made with tender chicken simmered in tomatoes, mushrooms, garlic, and wineβan easy, flavorful weeknight classic with rich French-Italian roots.

- 4 chicken thighs or breasts
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 cup mushrooms, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup white wine or chicken broth
- 1/2 cup chicken broth
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken with salt, pepper, and paprika.
- Sear chicken on both sides until golden; remove and set aside.
- Add onions and cook until softened.
- Stir in garlic and mushrooms and cook 2β3 minutes.
- Add diced tomatoes, tomato paste, wine, chicken broth, thyme, salt, and pepper.
- Return chicken to the pot and bring to a simmer.
- Cover and cook for 30β35 minutes until chicken is tender.
- Uncover and simmer to thicken sauce if needed.
- Garnish with fresh parsley and serve.
Notes
Serve with rice, mashed potatoes, or crusty bread. Wine adds depth, but chicken broth works perfectly as a substitute.
