Chicken Marengo Recipe (One Pot)


Description

This one-pot Chicken Marengo is a hearty, rustic dish made with tender chicken simmered in tomatoes, mushrooms, garlic, and wineβ€”an easy, flavorful weeknight classic with rich French-Italian roots.


Ingredients

  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup white wine or chicken broth
  • 1/2 cup chicken broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt, pepper, and paprika.
  3. Sear chicken on both sides until golden; remove and set aside.
  4. Add onions and cook until softened.
  5. Stir in garlic and mushrooms and cook 2–3 minutes.
  6. Add diced tomatoes, tomato paste, wine, chicken broth, thyme, salt, and pepper.
  7. Return chicken to the pot and bring to a simmer.
  8. Cover and cook for 30–35 minutes until chicken is tender.
  9. Uncover and simmer to thicken sauce if needed.
  10. Garnish with fresh parsley and serve.

Notes

Serve with rice, mashed potatoes, or crusty bread. Wine adds depth, but chicken broth works perfectly as a substitute.
