Ingredients

  • 2 lbs chicken thighs or breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • Fresh parsley for garnish
  • Lemon slices for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper.
  3. Add chicken and coat evenly in the marinade.
  4. Marinate for at least 30 minutes, preferably longer.
  5. Place chicken in a baking dish and pour remaining marinade over it.
  6. Bake for 25–35 minutes or until chicken is cooked through.
  7. Top with crumbled feta and return to the oven for 5 minutes.
  8. Garnish with parsley and lemon slices before serving.

Notes

Serve with rice, roasted potatoes, or a crisp Greek salad. Add olives for extra Mediterranean flavor!
