- 2 lbs chicken thighs or breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- Fresh parsley for garnish
- Lemon slices for serving
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper.
- Add chicken and coat evenly in the marinade.
- Marinate for at least 30 minutes, preferably longer.
- Place chicken in a baking dish and pour remaining marinade over it.
- Bake for 25–35 minutes or until chicken is cooked through.
- Top with crumbled feta and return to the oven for 5 minutes.
- Garnish with parsley and lemon slices before serving.
Notes
Serve with rice, roasted potatoes, or a crisp Greek salad. Add olives for extra Mediterranean flavor!
