- 4 medium sweet potatoes
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup cottage cheese
- 1 avocado, sliced
- 2 tablespoons hot honey
- 1 tablespoon olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce sweet potatoes with a fork.
- Bake sweet potatoes for 45–50 minutes, or until tender.
- Heat olive oil in a skillet over medium heat.
- Add diced onion and cook until softened.
- Add garlic and sauté for 1 minute.
- Add ground beef and cook until browned.
- Season with chili powder, smoked paprika, salt, and pepper.
- Once sweet potatoes are cooked, slice open and fluff the centers with a fork.
- Fill each potato with ground beef mixture.
- Top with cottage cheese and avocado slices.
- Drizzle with hot honey.
- Garnish with cilantro and serve warm.
Notes
For extra heat, add crushed red pepper or use spicy cottage cheese. These reheat well for meal prep!
