Ingredients

  • 1 block firm tofu, drained and crumbled
  • 1 tablespoon olive oil
  • 1/2 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon nutritional yeast (optional)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • 2 large flour tortillas
  • 1/2 cup spinach
  • Salsa or hot sauce for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onions and bell peppers; cook until softened.
  3. Crumble tofu into the skillet.
  4. Season with turmeric, garlic powder, onion powder, salt, pepper, and nutritional yeast if using.
  5. Cook for 5–7 minutes, stirring occasionally.
  6. Add spinach and cook until wilted.
  7. Warm flour tortillas.
  8. Fill each tortilla with scrambled tofu mixture.
  9. Add salsa or hot sauce.
  10. Roll tightly and serve warm.

Notes

Add black beans, avocado, or vegan cheese for extra flavor. Great for meal prep—make the filling ahead and assemble when ready!
