Ingredients

- 1 block firm tofu, drained and crumbled
- 1 tablespoon olive oil
- 1/2 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon nutritional yeast (optional)
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- Salt and pepper to taste
- 2 large flour tortillas
- 1/2 cup spinach
- Salsa or hot sauce for serving
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onions and bell peppers; cook until softened.
- Crumble tofu into the skillet.
- Season with turmeric, garlic powder, onion powder, salt, pepper, and nutritional yeast if using.
- Cook for 5–7 minutes, stirring occasionally.
- Add spinach and cook until wilted.
- Warm flour tortillas.
- Fill each tortilla with scrambled tofu mixture.
- Add salsa or hot sauce.
- Roll tightly and serve warm.
Notes
Add black beans, avocado, or vegan cheese for extra flavor. Great for meal prep—make the filling ahead and assemble when ready!
