- 4 medium potatoes, diced
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced potatoes and season with garlic powder, smoked paprika, salt, and pepper.
- Cook potatoes until golden brown and crispy, about 12–15 minutes.
- Add onions and bell peppers; cook until softened.
- Create small wells in the skillet and crack an egg into each one.
- Reduce heat to medium, cover, and cook until eggs reach desired doneness.
- Sprinkle cheese over the top and let melt.
- Garnish with parsley and serve warm.
Notes
Add crumbled bacon or sausage for extra protein. Swap potatoes for sweet potatoes for a cozy fall version!
