Ingredients

  • 4 medium potatoes, diced
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced potatoes and season with garlic powder, smoked paprika, salt, and pepper.
  3. Cook potatoes until golden brown and crispy, about 12–15 minutes.
  4. Add onions and bell peppers; cook until softened.
  5. Create small wells in the skillet and crack an egg into each one.
  6. Reduce heat to medium, cover, and cook until eggs reach desired doneness.
  7. Sprinkle cheese over the top and let melt.
  8. Garnish with parsley and serve warm.

Notes

Add crumbled bacon or sausage for extra protein. Swap potatoes for sweet potatoes for a cozy fall version!
