Chicken Inasal Recipe (Filipino Barbecue Chicken)


Description

A flavorful and aromatic Filipino Chicken Inasal—marinated in calamansi, vinegar, garlic, lemongrass, and annatto oil, then grilled to smoky perfection.


Ingredients

  • 4 chicken thighs or legs
  • 1/4 cup calamansi juice (or lemon/lime juice)
  • 1/4 cup cane vinegar
  • 4 cloves garlic, minced
  • 1 stalk lemongrass, chopped or smashed
  • 1 tbsp ginger, grated
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/2 cup annatto (atsuete) oil
  • Salt and pepper to taste
  • Extra annatto oil for basting

Instructions

  1. In a bowl, combine calamansi juice, vinegar, garlic, lemongrass, ginger, brown sugar, soy sauce, annatto oil, salt, and pepper.
  2. Add chicken pieces and marinate for at least 3 hours or overnight for deeper flavor.
  3. Preheat grill to medium heat.
  4. Grill chicken, basting frequently with annatto oil, until fully cooked and slightly charred.
  5. Serve hot with rice, soy sauce, calamansi, and chili garlic oil.

Notes

Best served with garlic rice. Marinating overnight gives the most authentic Chicken Inasal flavor.
