- 1 cup strong brewed espresso or coffee, cooled
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 16 oz mascarpone cheese
- 1 1/2 cups heavy whipping cream
- 1/2 cup powdered sugar
- Unsweetened cocoa powder for dusting
- Chocolate shavings (optional)
Instructions
- In a bowl, whisk together brewed espresso, sugar, and vanilla; set aside.
- In another mixing bowl, beat heavy cream and powdered sugar until stiff peaks form.
- Fold mascarpone gently into the whipped cream until smooth.
- Dip each ladyfinger quickly into the espresso mixture.
- Arrange soaked ladyfingers in a single layer in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with a second layer of soaked ladyfingers and mascarpone cream.
- Dust the top generously with cocoa powder.
- Refrigerate at least 4 hours or overnight for best flavor.
- Top with chocolate shavings if desired before serving.
Notes
For a stronger flavor, add a splash of coffee liqueur to the espresso. Overnight chilling gives the best texture!
