These Easy Tagalong Cookie Bites taste just like the classic peanut butter patties, featuring a simple chocolate–peanut butter combination everyone loves.
Ingredients

- 1 cup creamy peanut butter
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 sleeve Ritz crackers
- 2 cups chocolate chips
- 1 tablespoon coconut oil (optional)
Instructions
- Line a baking sheet with parchment paper.
- Mix peanut butter, powdered sugar, and vanilla until smooth.
- Spread about 1 teaspoon of the peanut butter mixture onto each cracker.
- Top with another cracker to form small sandwiches.
- Melt chocolate chips with coconut oil until smooth.
- Dip each cracker sandwich into the melted chocolate and place on the baking sheet.
- Refrigerate for 15–20 minutes until the chocolate sets.
- Serve immediately or store in an airtight container.
Notes
For a crisp coating, refrigerate the dipped cookies slightly longer. Use high-quality chocolate for best flavor.
