These Easy Tagalong Cookie Bites taste just like the classic peanut butter patties, featuring a simple chocolate–peanut butter combination everyone loves.


Ingredients

  • 1 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 sleeve Ritz crackers
  • 2 cups chocolate chips
  • 1 tablespoon coconut oil (optional)

Instructions

  1. Line a baking sheet with parchment paper.
  2. Mix peanut butter, powdered sugar, and vanilla until smooth.
  3. Spread about 1 teaspoon of the peanut butter mixture onto each cracker.
  4. Top with another cracker to form small sandwiches.
  5. Melt chocolate chips with coconut oil until smooth.
  6. Dip each cracker sandwich into the melted chocolate and place on the baking sheet.
  7. Refrigerate for 15–20 minutes until the chocolate sets.
  8. Serve immediately or store in an airtight container.
