Breakfast Cookies (Easy 1 Bowl Recipe)

Soft, chewy, wholesome breakfast cookies made in just one bowl—perfect for busy mornings, meal prep, or a grab-and-go healthy snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup chocolate chips or dried fruit
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup chopped nuts (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash bananas until smooth.
  3. Add peanut butter, honey, vanilla, cinnamon, and salt; mix well.
  4. Stir in oats, chocolate chips, and nuts until fully combined.
  5. Scoop dough into cookie mounds on the baking sheet.
  6. Flatten slightly with a spoon.
  7. Bake for 12–15 minutes or until edges are set.
  8. Cool on a wire rack and enjoy.

Notes

Make them your own with shredded coconut, raisins, or protein powder. Store in the fridge for up to a week!
