Description
This easy homemade chicken ramen features tender chicken, a rich and flavorful broth, fresh noodles, and all your favorite ramen toppings—comforting, delicious, and better than takeout.

- 2 chicken breasts or thighs
- 6 cups chicken broth
- 2 packs ramen noodles (without seasoning)
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 cup sliced mushrooms
- 2 green onions, chopped
- 2 soft-boiled eggs
- 1 cup baby spinach
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a pot and sear chicken until golden; remove and set aside.
- Add garlic and ginger to the pot and sauté until fragrant.
- Pour in chicken broth, soy sauce, and sesame oil.
- Add chicken back to the pot and simmer for 15–20 minutes.
- Remove chicken, shred or slice, and return to the broth.
- Add mushrooms and simmer for 5 minutes.
- Cook ramen noodles separately according to package instructions.
- Assemble bowls with noodles, broth, chicken, spinach, green onions, and soft-boiled eggs.
- Serve hot and enjoy.
Notes
Customize with corn, chili oil, bok choy, or seaweed. For richer broth, add a spoonful of miso paste.
