Ingredients

  • 2 lbs chicken legs or thighs
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • Red food coloring (optional)
  • Lemon wedges and cilantro for serving

Instructions

  1. In a mixing bowl, combine yogurt, lemon juice, ginger, garlic, olive oil, and all spices.
  2. Mix well to form a smooth marinade.
  3. Score chicken pieces with shallow cuts.
  4. Coat chicken thoroughly in the marinade.
  5. Cover and refrigerate for at least 2 hours, ideally overnight.
  6. Preheat oven to 425°F (220°C) or heat grill to medium-high.
  7. Arrange chicken on a baking rack or grill.
  8. Cook for 25–35 minutes, flipping halfway, until chicken is cooked through and slightly charred.
  9. Broil for 2–3 minutes for extra char if desired.
  10. Serve with lemon wedges and cilantro.

Notes

For the most authentic flavor, marinate overnight. Serve with naan, rice, or a fresh cucumber salad.
