- 4–6 chicken thighs or breasts
- 2 bell peppers, sliced
- 1 large onion, sliced
- 4 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Optional: lemon slices, fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Add sliced peppers and onions to a roaster pan.
- Drizzle with olive oil and season with salt, pepper, and half the seasoning.
- Place chicken pieces on top of the vegetables.
- Season chicken with remaining spices and garlic.
- Add optional lemon slices for extra flavor.
- Bake for 35–45 minutes or until chicken is cooked through and vegetables are tender.
- Garnish with fresh parsley before serving.
Notes
Serve with rice, potatoes, or crusty bread. Use bone-in chicken for extra juiciness, or add mushrooms and cherry tomatoes for more veggies.
