  • 46 chicken thighs or breasts
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Optional: lemon slices, fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Add sliced peppers and onions to a roaster pan.
  3. Drizzle with olive oil and season with salt, pepper, and half the seasoning.
  4. Place chicken pieces on top of the vegetables.
  5. Season chicken with remaining spices and garlic.
  6. Add optional lemon slices for extra flavor.
  7. Bake for 35–45 minutes or until chicken is cooked through and vegetables are tender.
  8. Garnish with fresh parsley before serving.
