A warm, cozy, and comforting apple bread pudding made with soft brioche, cinnamon-spiced apples, and a rich custard base—perfect for breakfast or dessert.

- 4 cups cubed brioche or day-old bread
- 2 large apples, peeled and diced
- 3 large eggs
- 2 cups milk or half-and-half
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp butter
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a baking dish and set aside.
- In a skillet, melt the butter and sauté the diced apples with cinnamon for 3–4 minutes.
- In a bowl, whisk together the eggs, milk, sugar, vanilla, nutmeg, and salt.
- Add the bread cubes and sautéed apples to the custard mixture and gently stir to coat.
- Pour the mixture into the greased baking dish.
- Let it rest for 10 minutes to allow the bread to soak up the custard.
- Bake for 40–45 minutes, until golden and set.
- Let cool slightly before serving warm.
Notes
Great served with caramel sauce, whipped cream, or vanilla ice cream. Perfect for using up leftover bread.
