- 1 box instant lemon pudding mix
- 4 large eggs
- 3/4 cup vegetable oil
- 1 cup 7Up soda
- For the glaze: 1 cup powdered sugar
- 2–3 tbsp lemon juice
Instructions
- Preheat oven to 325°F (165°C).
- Grease and flour a bundt pan.
- In a bowl, mix the lemon cake mix, pudding mix, eggs, oil, and 7Up.
- Beat until smooth and well combined.
- Pour batter into prepared pan.
- Bake for 45–55 minutes or until a toothpick comes out clean.
- Let cake cool before removing from pan.
- Whisk together powdered sugar and lemon juice to make glaze.
- Drizzle glaze over cooled cake and serve.
Notes
For extra lemon flavor, add lemon zest to the batter or glaze. Store leftovers covered at room temperature.
