Ingredients

  • 1 box lemon cake mix
  • 1 box instant lemon pudding mix
  • 4 large eggs
  • 3/4 cup vegetable oil
  • 1 cup 7Up soda
  • For the glaze: 1 cup powdered sugar
  • 23 tbsp lemon juice

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Grease and flour a bundt pan.
  3. In a bowl, mix the lemon cake mix, pudding mix, eggs, oil, and 7Up.
  4. Beat until smooth and well combined.
  5. Pour batter into prepared pan.
  6. Bake for 45–55 minutes or until a toothpick comes out clean.
  7. Let cake cool before removing from pan.
  8. Whisk together powdered sugar and lemon juice to make glaze.
  9. Drizzle glaze over cooled cake and serve.

Notes

For extra lemon flavor, add lemon zest to the batter or glaze. Store leftovers covered at room temperature.
