Ingredients

  • 2 cooked chicken breasts, sliced
  • 2 cups cooked quinoa or brown rice
  • 2 cups diced sweet potatoes
  • 1 cup Brussels sprouts, halved
  • 1 apple, sliced
  • 1/4 cup dried cranberries
  • 1/4 cup pecans or walnuts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. Spread sweet potatoes and Brussels sprouts on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper.
  4. Roast for 20–25 minutes until tender and golden.
  5. Whisk together maple syrup, Dijon mustard, apple cider vinegar, and lemon juice to make the dressing.
  6. Assemble bowls with quinoa or brown rice as the base.
  7. Add roasted vegetables, sliced chicken, apples, cranberries, and nuts.
  8. Drizzle with maple Dijon dressing.
  9. Serve warm or room temperature.

Notes

Add feta cheese or pumpkin seeds for extra fall flair. Works great for meal prep!
