Instructions
- Preheat oven to 400Β°F (200Β°C).
- Spread sweet potatoes and Brussels sprouts on a baking sheet.
- Drizzle with olive oil, salt, and pepper.
- Roast for 20β25 minutes until tender and golden.
- Whisk together maple syrup, Dijon mustard, apple cider vinegar, and lemon juice to make the dressing.
- Assemble bowls with quinoa or brown rice as the base.
- Add roasted vegetables, sliced chicken, apples, cranberries, and nuts.
- Drizzle with maple Dijon dressing.
- Serve warm or room temperature.
