- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar or Mexican blend cheese
- 1/2 cup salsa
- 4 large flour tortillas
- Shredded lettuce (optional)
- Sour cream (optional)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onion and cook until softened.
- Stir in garlic and cook for 1 minute.
- Add ground beef and cook until browned; drain excess fat.
- Mix in taco seasoning and water; simmer for 2–3 minutes.
- Warm tortillas in a microwave or skillet.
- Layer each tortilla with beef, rice, beans, cheese, and salsa.
- Add lettuce or sour cream if desired.
- Fold sides and roll tightly into a burrito.
- Serve warm or lightly toast in a skillet for extra crispiness.
