Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning or homemade seasoning
  • 1/2 cup water
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup salsa
  • 4 large flour tortillas
  • Shredded lettuce (optional)
  • Sour cream (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add ground beef and cook until browned; drain excess fat.
  5. Mix in taco seasoning and water; simmer for 2–3 minutes.
  6. Warm tortillas in a microwave or skillet.
  7. Layer each tortilla with beef, rice, beans, cheese, and salsa.
  8. Add lettuce or sour cream if desired.
  9. Fold sides and roll tightly into a burrito.
  10. Serve warm or lightly toast in a skillet for extra crispiness.
