- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning or homemade seasoning
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheddar or Mexican blend cheese
- 8–10 flour or corn tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add diced onion and garlic; cook until softened.
- Add ground beef and cook until browned; drain grease.
- Stir in taco seasoning and a few tablespoons of enchilada sauce.
- Warm tortillas for easier rolling.
- Fill each tortilla with beef mixture and cheese.
- Roll and place seam-side down in a baking dish.
- Pour remaining enchilada sauce over the top.
- Sprinkle with remaining cheese.
- Bake 20–25 minutes or until bubbly.
- Garnish with cilantro and serve warm.
Notes
Add sour cream, jalapeños, or avocado for extra flavor. Use corn tortillas for a more traditional enchilada!
