🌮 Ground Beef Enchiladas


Description

Hearty, cheesy, flavor-packed ground beef enchiladas—easy, delicious, and perfect for a satisfying weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning or homemade seasoning
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheddar or Mexican blend cheese
  • 810 flour or corn tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add diced onion and garlic; cook until softened.
  4. Add ground beef and cook until browned; drain grease.
  5. Stir in taco seasoning and a few tablespoons of enchilada sauce.
  6. Warm tortillas for easier rolling.
  7. Fill each tortilla with beef mixture and cheese.
  8. Roll and place seam-side down in a baking dish.
  9. Pour remaining enchilada sauce over the top.
  10. Sprinkle with remaining cheese.
  11. Bake 20–25 minutes or until bubbly.
  12. Garnish with cilantro and serve warm.

Notes

Add sour cream, jalapeños, or avocado for extra flavor. Use corn tortillas for a more traditional enchilada!
