Ingredients

  • 4 boneless skinless chicken breasts
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup shredded Mexican-blend cheese
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 200°C.
  2. Place chicken breasts on a cutting board.
  3. Make deep slices across each chicken breast without cutting all the way through.
  4. Rub chicken with olive oil, fajita seasoning, salt, and black pepper.
  5. Stuff sliced bell peppers and red onion into the cuts.
  6. Top with shredded cheese.
