- 4 boneless skinless chicken breasts
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1 cup shredded Mexican-blend cheese
- 2 tablespoons olive oil
- 1 tablespoon fajita seasoning
- Salt and black pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 200°C.
- Place chicken breasts on a cutting board.
- Make deep slices across each chicken breast without cutting all the way through.
- Rub chicken with olive oil, fajita seasoning, salt, and black pepper.
- Stuff sliced bell peppers and red onion into the cuts.
