- 8 flour tortillas
- 8 large eggs
- 1/2 lb breakfast sausage
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 cup enchilada sauce
- 1/4 cup milk
- Salt and pepper to taste
- Chopped cilantro for topping (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Cook sausage in a skillet until browned; set aside.
- Whisk eggs with milk, salt, and pepper.
- Scramble eggs in the same skillet until just set.
- Add onions, bell peppers, sausage, and half the cheese; stir to combine.
- Spoon the mixture into the center of each tortilla.
- Roll tortillas and place seam-side down in a baking dish.
- Pour enchilada sauce over the top.
- Sprinkle with remaining cheese.
- Bake for 20–25 minutes, until cheese is melted and bubbly.
- Top with cilantro and serve warm.
Notes
Add jalapeños or salsa for extra heat. These reheat beautifully, making them great for meal prep!
